Obligatory Valentine's Day Post

I'm obliged. It's my duty as a blogger to post shit about Valentine's Day. But wanna know something? I'm not a fan of the Hallmark holiday in the slightest. But then again, you probably already figured that. Because while I really do love love and while I love my husband, my family, and my friends so, so stinking much - I think the holiday that supposedly celebrates love is well, kinda lame.

I don't need a specified day to celebrate love. I do that anyways every damn day! Unless I'm in a mood of course. Then I'm probably not so loving. But seriously, why is this holiday such a big deal?

But again, I'm obliged. So here's my favorite red shirt currently. It's a 70s style rayon turtleneck that's delightfully stretchy. Worn with my favorite bell bottoms and heart-shaped shades I bought years ago, it's a pretty fun outfit that I'd wear just about any Winter day. Outfit details at the bottom of this post.

Also, here's some heart shaped store bought ravioli from Nuovo. Truth: As much as I love all things homemade, this pasta is legit good. It probably helps matters that I drenched it in a Gouda cream sauce (recipe below). By the way, this sauce is semi heathy because I don't use cream (gasp!) as I opt for almond milk instead. Crazy, I know - but I assure you, it will not be missed. I've used it for mac-n-cheese too and it's pretty heavenly even sans the cream. But it's only semi healthy because umm, 1 1/2 cups of cheese....

So there it is. My obligatory valentine's day post. You're welcome?

Healthy-ish Gouda "Cream" Sauce (delicious on any pasta)

1 1/2 cups shredded young gouda cheese (aka, not smoked or aged)
1 tablespoon butter
1 tablespoon almond flour
1 cup unsweetened almond milk
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon crushed red pepper
1/2 teaspoon freshly grated nutmeg

In a saucepan, melt butter over medium heat. Slowly stir in flour and continue stirring until golden and nutty. Slowly whisk in almond milk. Bring to a light boil and stir until thickened. Then, remove from heat and whisk in shredded cheese. Continue whisking until sauce is smooth. Add salt, pepper, and nutmeg and stir. Mix in cooked pasta and enjoy! 

*Yields 4 servings
